Hello lovelies! It's time for my cooking and baking update! I've definitely been having fun in the kitchen! Here are a few of the things I've made along with all the treats I whipped up when I hosted BUNCO {which by the way is SO MUCH FUN!}

{Spinach & Artichoke dip -- recipe below; Red Velvet cookies}

CREAMY HOT SPINACH AND ARTICHOKE DIP

{via}

Ingredients:

1 can (14 oz.) artichoke hearts, drained and chopped

1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry

1 cup Hellmann's® Light (or Regular) Mayonnaise

1 cup grated Parmesan cheese (about 4 oz.)

1 clove garlic, finely chopped (optional)

Directions:

Preheat oven to 350˚.

In a casserole dish, combine all ingredients. Bake uncovered 25 minutes or until heated through. Serve with your favorite dippers.

*I used small ramekins instead of a casserole dish.

Dierks in NYC!

Hello lovelies! Earlier last week, I saw Dierks Bentley in a private NYC concert! I'm so glad I won the tickets because it was AWESOME!

Sick & Exhausted

Hello lovelies! I didn't mean to drop off the face of the earth! Things have been beyond crazy! This past Saturday was my first day off in 12 days! Prior to that I was working 10-12 hours days on top of hosting Super Bowl and Bunco at my house, while even squeezing some time in to see Dierks Bentley in NYC. I was so excited to have some time off but as soon as Saturday morning hit... my body was done. I was achy and had a 103 fever. My body was not happy with me. I took it easy, slept A LOT and by Sunday afternoon, I was feeling a little bit better and pulled myself together to make a Jason's biggest fan video. {PS: Who saw my man at the Grammy's? :)}

I still wasn't feeling too good yesterday but headed to school anyway. About an hour in, everyone told me how sickly I looked and how I didn't seem myself. My fever returned and my stomach was screaming at me. I left school and went to the doctor. It turns out I had an adverse reaction to Tylenol PM I had taken because I had eaten enough. So needless to say, its been a rough few days! And the point of all this, listen to your body and what it's telling you! Taking care of yourself is so important.

So that's where I've been and I will be back with more on . . .

My 2012 Wish List

Hello lovelies! I'm having a slight problem ... with my spending! I know I said I've been working hard to pay off my bills and since I bought a few items {iPhone, plane ticket, riding boots & clothes for Nashville} that I was done shopping. But I still have this ITCH to SPEND! No bueno! I'm really trying so hard to be good and not have the "I work so hard and I deserve to buy myself whatever I want" attitude.

I've decided to create a WISH LIST. All items I must say are NOT CHEAP but there are also some that I'd like more than others and some that I will eventually need. We'll see how 2012 goes and if I'll be able to find money in the budget to purchase them! ;)

Review:
The Fidelity Files is a novel that I couldn't put down and read it in a 24-hour period. (I should also mention it is 422 pages!) Author Jessica Brody does an amazing job writing as the book is so well-written that I felt I was in Jennifer's mind and could understand why she was sacrificing living her own life to help others. The Fidelity Files was highly entertaining and full of unexpected twists and turns that it had my full attention and I couldn't wait to see what would happen next. This book is nothing like I've ever read before and is chick-lit at its finest! I HIGHLY RECOMMEND READING THIS BOOK!

**I just realized that there is a sequel to this book, Love Under Cover. I just ordered it from Amazon and am looking forward to reading it! Stay tuned for the review. ;)

New Purchases

Hello lovelies! Last week, I blogged {here} about my multiple jobs. I promised that I would stop shopping and focus on paying off my student loan debt since I bought the two things I really wanted. 1: my iPhone 4S {I am seriously in love with this phone! It is amazing! More on my iPhone obsession soon!} 2: Plane ticket to Nashville for CMA Fest {WOOHOO to see my fave!! He's excited to see me too ;)} While I've been trying to save, I did end up purchasing some items. But . . . they were all bargain priced! Since I'm heading to Nashville in a month, I thought I needed a few additions to my wardrobe. {Pattern print belted dress -- $29.50} {Lace dress -- $15.00 on sale} {Suede flat boot -- $17.70 on sale} {Crochet front cardigan -- $15.00 on sale} and ... Hey y'all! I may be a New Yorker ... but I'm a country girl at heart. I LOVE COUNTRY MUSIC! My favorite singer is JASON ALDEAN! To say, I'm mildly obsessed is a serious understatement. I mean not only do I love his music (and play it in my car 24/7) ... I LOVE HIM! How could you not? I mean look at him...

I have been fortunate enough to see him in concert a bunch of times in the last few months. I'd love to see him even more, but he doesn't always come close to where I live and I usually have to travel out of state.

I'm usually pretty open with what I share on my blog and DO post what I want to because IT IS MY BLOG... but I have to admit that SOMETIMES when I hit "publish post", I am hesitant. After writing this blog for a year now, I am able to tell what posts will get the a lot pageviews and comments and what won't. I know it's not about that but sometimes I think maybe it would be best if I don't blog about those topics as much.

Hello lovelies! Last week as I was driving to work I heard Jason's song, Fly Over States on Sirius radio. I was escatic! Fly Over States is one of my favorite songs off of Jason's album, My Kinda Party! I was so happy to hear it because it's a new song of Jason's on the radio for people to hear! Of course, I always love hearing his hit singles, Tattoos On This Town, Dirt Road Anthem, My Kinda Party, and Don't You Wanna Stay and I've loved them since I first heard them in concert in September 2010 but it's really nice to hear another one of his songs getting airplay!

My mom is the most amazing person I know! She is more than a mom, she is my best friend! I don't know what I would do without her! I am who I am because of her! I have everything I have because of her! She is by far the best person I know and I'm so lucky to be able to call her mom!

She Works Hard for the Money. . .

Hello lovelies! I was very close to calling it quits on blogging since I've been so horrible at it lately but a bunch of lovely ladies got me to stick around! So I'm going to do my best to be around more often.

2012 has been a very hectic year thus far as I began working more! I have a lot of debt (all student loans, which is probably mortgage equivalent with its 6 figures ... good thing, I love my job!). Anywho, I've been working a lot to try and get it down. I posted on twitter a few weeks back about my working several jobs and received a lot of responses and questions asking how I manage it all. Well I'm going to try to explain it all in this post.

For the last 2 1/2 years, I've worked 2 jobs. You see, I've been laid off 3 times from teaching over the last few years and even though, I've been lucky enough to always get re-hired back within a few months... I still needed to work to bring in income. I began working in an office and when I began teaching again, my boss allowed me to work from home. That made it much easier for me to manage both jobs.

Last summer, I fell into a waitressing job, which was good extra money that I couldn't turn down. When the school year began in September, I decided that I would teach, work for the office, and waitress only when needed on the weekends. It has worked out great and I have been able to balance it all!

Well up until two weeks ago that is! When we returned from our holiday break, I agreed to teach after school! Enter another job! The money is just too hard to turn down! I love everything I'm doing and I just need to find a way to not push myself to hard and keep focused on my priorities. I've been doing good so far ... just need to find more blogging time!

Working more has been able to buy things that I've really wanted.

#1 .... the iPhone 4s!

and

#2 ... a plane ticket and tickets to CMA Fest in Nashville!

Do you really think I would pass up another opportunity to see my JA and Jesslyn?!

Now that I've bought myself two things {that I think I really deserved ;)}, it is time for me to focus back on my original plan, which was to pay off this student loan debt! So no more spending ... or maybe once in awhile! ;)

One thing I can say is that it really makes me feel proud and accomplished to know that I've paid for my undergraduate and graduate school education. It's a good feeling! :)

So that's where I've been hiding. I haven't been a fan of my recent posts lately either... so if you have anything you'd like to see more of on my blog ... please let me know! I'm always open to suggestions!

Hello lovelies! Just wanted to pop in with an update on my 2012 Jason adventures! {If you're new to my blog, welcome! The Jason I'm referring to is Jason Aldean, yes we're on a first name basis seeing as though I'm his biggest fan and all ;)}

As of right now, I have tickets to see Jason in February, March, and June! AHHHHH! I seriously cannot wait! I have not seen him since August in Chicago! I miss him very much! Words cannot describe!

In February, I will be traveling from New York to Nashville to see him! I'm so excited to see him in Nashville ... the home of country music! I also get to see my bestie, Jesslyn Amber! <3 <3

44 DAYS!!

In March, I will be seeing him closer to home in New Jersey!

In June, I will be traveling from New York to Nashville AGAIN to see Jason at CMA Fest! I seriously cannot wait to experience CMA Fest in Nashville!

He just started announcing his 2012 tour and I'm hoping to have even more opportunities to travel and see him! I would really love to see him in his hometown of Macon, Georgia so if he plays in Macon ... I will be there!

Call me crazy, but this is what makes me happy! Jason's music has gotten me through some tough times over the last 5 years and I wouldn't have it any other way!

Eating Right

Hello lovelies! Once the new year began, I knew it was time to make some changes, not resolutions, but something more important, something more longer lasting ... a lifestyle change. I have become determined to maintain a healthier lifestyle... one filled with eating right and exercise. I do have a gym membership and go a few nights a week with my sister, so lately I have become more focused on what I've been eating. I'm sharing what I've been cooking up over the last week and all recipes are healthy and low-cal! Oh, and even weight watchers friendly! You will notice that I've also been baking! You won't see me giving that up anytime soon ... I love it too much! But I only bake for someone's birthday, a special occasion, or when I know I can pass the treats on to others! If I do taste test, it's one cookie or small one piece ... all in moderation!

Hello friends! As many of you know, I'm a big fan of bucket lists and have several! With the new year beginning, I thought I would share my 2011 bucket list as well as my new list for 2012!

reach my ideal weight -- work-out and cook healthy regularly (at least 3-4 days a week) **work in progress! I have a gym membership and have been going regularly. I am also working on cooking healthy and preparing lunches ahead of time.
start a blog and have 365 posts for the year ** completed ✓ {and blogged about! ;)}
learn how to do make-up ** completed ✓
take photography classes ** will be added to my 2012 bucket list!
visit at least 5 new cities ** completed ✓

My Favorite Gift . . . Fun With Phones

... Starting with my FAVORITE GIFTS...

The martini glass {below} was my FAVORITE gift! It was made by my talented sister! I collect painted martini glasses so she decided to paint me one this year. What was the theme? JASON ALDEAN, of course! It looks amazing! The pictures don't even begin to do it justice! When I opened it and saw it, I cried! It is such a special and meaningful gift that I will cherish forever! Thank you so much, Danielle! ♥

My favorite gift from Santa was my KitchenAid mixer! I've been wanting one foreverrrrrr and I think I proved this year with all my baking that I truly deserved it! {I mean did you see how much I whipped up in the kitchen, I think you'd agree! ;)}

Dear Future Husband-

Hello lovelies! With 2012 upon us, I've been doing a lot of thinking about what I'm hoping for in the new year. I'm very fortunate to have a great family, a sweet dog, wonderful friends {all of you included!}, a job that I love, the ability to travel and visit new places, but I can't help but feel like something (or someone) is missing.

In January, it will be 3 years since I officially ended my 8 year relationship with my ex. I was so young when we started dating (I was 17) that when it ended I was 25 and really had never fully experienced dating as an adult. I began casual dating and over the course of the last few years, I have dated a lot. I have had a few short term relationships but nothing I saw heading in the direction of long term. It is definitely not something I'm happy about but I find myself walking away from a lot of guys when I don't see it going anywhere. I don't consider myself picky but I'm just not going to settle for anything less that what I feel like I deserve. No one should!

Anyways, I'm hoping that in 2012 . . . I find the man I've been looking for.

So . . .

Dear Future Husband,

I love my job . . . so don't worry, you don't have to work a few jobs so I can stay at home.

I love to clean . . . so the house will always be neat and tidy.

{LOL! I just got a kick out of this picture!}

Oh, and your help will always be greatly appreciated with aforementioned items!

Christmas Survey!

Hello lovelies! It's Christmas Eve Eve! I thought I'd do a little Christmas survey!

1. Eggnog or hot chocolate? Hot chocolate! :)

2. Does Santa wrap presents or just set them under the tree? Santa wraps the presents. Yes, I still believe in Santa! ;)

3. Colored lights on tree/house or white? We have both colored and white on the tree. On our house, we have white icicle lights.

4. Do you hang mistletoe? We used to, but not so much in recent years. I will definitely be sure to hang some in my future house.

5. When do you put your decorations up? Usually the first weekend in December.

6. What is your favorite holiday dish? Holiday cookies! I also love lasagna and all the yummy appetizers before dinner!

7. Favorite holiday memory as a child? Writing letters to Santa and reading his responses Christmas morning.

8. When and how did you learn the truth about Santa? I'm not sure what you're talking about! ;)

9. Do you open a gift on Christmas Eve? My sister and I exchange our gifts with each other on Christmas Eve. It has been our tradition for about 10 years now.

10. How do you decorate your Christmas tree? This year, it was very simple. Our tree was filled with ornaments special and close to our hearts.

11. Snow! Love it or dread it? LOVE IT!

12. Can you ice skate? No! I really do need some practice!

13. Do you remember your favorite gift? Umm... this is a tough one! I received a cell phone sophomore year of high school. A favorite gift when I was a child was a custom dollhouse. My grandpa made the dollhouse to look exactly like my house for my sister and I. That was definitely a very special gift!

14. What’s the most important thing about the holidays for you? Hands down, spending time with my family! I really love embracing what the holiday brings especially the love and cheer!

15. What is your favorite holiday dessert? Cookies! I am known for my holiday cookie baskets! :)

16. What is your favorite holiday tradition? Waking up early on Christmas morning, opening gifts and making and eating breakfast with my mom and sister.

17. What tops your tree? A gold star that lights up.

18. Which do you prefer: giving or receiving? I LOVE giving! It is always nice to see people's reaction and is always a great feeling! :)

19. Candy canes: yuck or yum? Yum! But not too many! I'm only a peppermint fan during the holidays!

20. Favorite Christmas movie? Christmas Vacation! I can quote the entire movie!

Holiday Memories

Hello lovelies! Lyndsay and I are back for the final week of our holiday linky party! We have had such a great time hosting and are so happy with the response we've received! A special thank you to everyone who has read our posts and joined us over the last few weeks!

Let's get to the "last dance" of the party . . . :)

When I began to write this post, I thought of so many wonderful holiday memories from over the years. I sat trying to think of one to share with you. As many of you know, I lost my grandma a month ago and she has really been heavy. All of my memories had her in them and as I began to write, I found myself crying and unable to get through. It is still all so hard for me to talk about that I decided to let pictures do all the talking.

My mom and grandma were so unbelievably close. They had an amazing bond! I'm so happy to say that I have that bond with my mom and am so lucky to have had a very close relationship with my Grandma. My Grandma was apart of my life every single day and I cherish all the times we spent together.

My favorite Christmas memories will always include my Grandma ... even those I make in the future because I know she will always be there with me in spirit and in my heart.

Christmas Trees in the Kitchen

Hello lovelies! My baking bestie, Danielle {from Hugs & Cookies XOXO -- definitely check her out! She's awesome!} posted a YUM YUM tree on her blog and I loved it! It's a holiday tree filled with food ornaments in the kitchen! Her tree began with food ornaments and is now filled with delicious homemade cookies ornaments that she created with her boys. Super adorable! I loved the idea so much that I did some research on none other than pinterest of course!

Hello lovelies! Sorry I've been MIA :( I will be back soon with an update on what's been going on! I'm popping in quick again today because . . . I have a question!

Are you baking for the holidays?

A Coastal Christmas

Hello lovelies! As many of you know I love the beach especially palm trees! My bedroom is beach themed {you can see pictures here} and I love the idea of having themed rooms in my own home someday. I also like the idea of a "COASTAL CHRISTMAS". Maybe I can alternate each year between traditional decor and beach decor. ;)

Red Velvet Hot Chocolate

Hello lovelies!

Thirsty? Cold? In need of a hot beverage? How about a RED VELVET HOT CHOCOLATE with CREAM CHEESE WHIPPED CREAM?

Red Velvet Hot Chocolate with Cream Cheese Whipped Cream

{serves 4}

Ingredients:

4 cups whole milk
1 dash water
3/4 cup semi-sweet chocolate chips
1/4 cup sugar
1 tsp. red food coloring
1 cup heavy whipping cream
2 - 4 tbsp. whipped cream cheese, room temperature

Directions:
In a stand mixer, combine the heavy cream and sugar. Whip on medium speed with the whisk attachment for 2 - 3 minutes. Just before peaks form, add the cream cheese and whisk for another 2 minutes. Taste and add more cream cheese to taste. Be careful not to over whip though or else you'll have butter.

In a medium saucepan, heat the milk over medium heat. Add a splash of water and the chocolate chips, constantly stirring gently. When almost melted, add the red food coloring and stir. When the chocolate chips are thoroughly melted, pour the hot chocolate into mugs and top with the whipped cream.
